Health Kick

I made some granola last week. I'm not a super granola-y person so I made something that I would like. Since we still don't have a stove I thought this would be a challenge. I made a small batch that could fit in my toaster oven, and it worked. 

Here's my mixed and oven prepared mixture. 

2 tbsp creamy peanut butter
2 tbsp of honey
1/2 tsp of vanilla extract
1/4 tsp cinnamon
1 cup oats
(you can of course make a bigger portion, just duplicate everything for each cup of oats)

Preheat the oven to 325 degrees. Spray a cookie sheet with non-stick spray and set aside. In a bowl combine peanut butter and honey, microwave until its melty (about 25 seconds). Stir.

Then stir in cinnamon and vanilla into the peanut butter mixture. Add the oats and stir until the oats are completely covered. Spread out onto your cookie sheet and bake for 8-9 min, or until you see it slightly browned. Let completely cool until its crunchy. 
The whole things start to finish is about 20 min, that's with getting everything out and making it start to finish. Super fast and easy.

This is good as a snack for you or your kids and it good as a topper on stuff like plain yogurt. 

You can play around with the ingredients if you like so it's better fitted to your preferred taste.
